Homemade Baileys | The Velvety Irish Cream of Your Dreams

Baileys is a chocolatey coffee liquor that is nice by itself or pairs well with others - like the homemade Kahlua you have now. This is another spirit that makes a great gift as well ❤️
There used to be a chocolate bar near me, and it was the place of my dreams. They had some of the most wonderful drinks you could imagine - but I guess reality is places like that are special occasion places and there's only so much you could really order there. They didn't make it through the pandemic but I think about them a lot. As I was making my Vietnamese iced coffee this morning, I had the thought about making homemade Baileys. It calls for condensed milk which I don't usually keep on hand but the stars aligned for me today. Funny story, I actually have a sizeable scar on the tip of one of my fingers from opening a can to make homemade Baileys probably 10 years ago - the lid sliced right through my finger and I lost a good chunk of it. Not to mention the condensed milk I had just opened. Yuck.

So anyways, homemade Baileys is another drink that is incredibly easy to make yourself although this one takes a little more planning for me. Just a smidge because of the condensed milk. I usually have a whiskey to use - the most obvious choice is Jameson but you can honestly use any whiskey you prefer. The other note about this recipe is I don't fancy the taste of whiskey all that much so I add a little almond extract to counterbalance the taste. I prefer a little more coffee taste for mine, and since this is a chocolate spirit it is another good way to use your homemade mocha sauce. This is a good recipe to play around with ratios.
Ingredients
1/2 cup brewed coffee
1/4 cup heavy cream
1/4 cup of milk
1/2 cup whiskey
1/2 can condensed milk (7oz)
1 Tbl homemade Mocha Sauce
1 tsp vanilla extract
1/2 tsp almond extract
Step 1: Brew Coffee
Brew any coffee you would like; flavors work just fine. Or if you prefer you can make a little instant coffee. Let your coffee cool a little bit before you start mixing.
Step 2: Mix Ingredients
Add your heavy cream, milk, (or half and half), whiskey, condensed milk, mocha sauce and vanilla and almond extracts to your cooled coffee. Mix well and let sit in the fridge for about a day for the optimal flavor melding. Keep refrigerated.
